Paleo Buffalo Chicken Nuggets: PaleoSpirit.comPaleo Chicken Nuggets

Ingredients:

Chicken Nugget

1 LB Ground Chicken
1/4 cup coconut flour
1 Egg
2 tsp Franks Red Hot
1 tsp Salt
1 tsp Onion Powder
1/2 tsp garlic powder

"Breading"

1/8 cup coconut flour
1/8 cup almond flour
1/4 tsp salt

Instructions:

*Preheat oven to 375 degrees F.

1) In a small bowl combine dry items for "Chicken Nuggets" in a bowl so they are well combined.
2) In a second small bowl combine ingredients for the "breading" and set aside
3) In a medium bowl, combine Chicken and eggs then add your dry items being sure to mix well.
4) Portion small amounts of the chicken mixture into small meat balls and roll in the "breading."
5) Smush the chicken ball into a chicken nugget shaped patty and place on a parchment paper covered pan or cookie sheet.
6) Let bake for approximately 25 min.
7) I then turn on the boriler for a few minutes to help give the nuggets a bit more of a crispy layer.
8) Enjoy with your favorite condiments!

Chicken Curry Calfouti






6 eggs
1 TBSP Olive Oil
3/4 cup coconut milk
2 lbs shredded chicken
2 tablespoons curry spice, or to taste
Franks Hot Sauce


Directions:

Chicken:

1) Bring a large pot of water to a boil
2) Place raw or defrosted chicken in boiling water and cook until done.
3) Remove chicken form water and shred using either two forks or, once it has cooled a bit, your hands.

Other stuff ;)

1) Preheat oven to 400° F.
2) "Grease" a 10” round or 13×9” baking dish with olive oil to keep this from sticking.
3) Whisk together eggs, oil & coconut milk and curry powder until frothy.
4) Add chicken to eggs and spread to fill pan.
5) Bake for about 45 min or until the top is a nice golden brown.

I like to add frank's hot sauce to the top once it has finished cooking. I put that S*** on everything! OK, enough with the silly commercial quotes. This is another pretty simple yet very scrumptious paleo meal!
