Paleo "Pizza" Spaghetti Squash

 

Paleo "Pizza" Spaghetti Squash

Ingredients:

2 eggs
1 small / medium Spaghetti Squash
1 can tomato sauce
"Pizza Toppings"
     - For my dish I used some chicken tossed in Italian herbs (precooked in a skillet or pan)
A dab of olive oil
Coconut oil for greasing

Spices:

1 table spoon minced garlic
2 teaspoons oregano
1 teaspoon black pepper (or to taste)


How to cook the squash:

1) Cut spaghetti squash in half  and scoop out the seeds and pulp from the center.
2) Rub olive oil on the open "rim" of the spaghetti squash and place rind side up on a cookie sheet.
3) Bake at 400 degrees for about 45 min.
4) when done, take the squash out of the over and flip over.
5) take a fork and run it long ways from one end to the other to get long strings of squash.

The "crust":

1)  In a bowl mix 3 cups squash, garlic, oregano, and pepper.  (no need to beat the eggs)
2) Grease a pie pan / Pyrex dish with coconut oil or olive oil (coconut oil seems to work better for greasing diahes)
3) Bake at 400 degrees for about 10 min.
4) Remove form the oven and add your toppings and sauce on top.
5) Bake at 400 degrees for another 25min.


** I liked this recipe, but the squash is still "soggy".  It may be better to leave the crust in the oven with no toppings longer to dry out the dish and make it a little dryer.
