Paleo Biscuits and Gravy


Gravy:

1 lb Sage style sausage
   - Or you can add 1 tsp dried rubbed sage to country style sausage
2 cups Coconut Milk
1/2 tsp black pepper
2 tbsp arrow root powder
1/4 tsp cayenne pepper
1/4 tsp salt (optional)

1) brown sausage
2) remove sausage and add arrow root powder to leftover grease
3) over medium heat whist until grease is absorbed
4) add coconut milk 1/3 cup at a time and whisk till "smooth" each time.
5) whisk in spices
6) add sausage back to gravy to heat sausage back up.
7) if gravy is to thin add arrow root powder 1/2 tsp at a time and mix until desired consistency.


Biscuits:

1/2 cup coconut flour
1/4 cup almond flour
1 tsp baking soda
6 egg whites
1 tbsp coconut oil
1/2 tsp salt (optional)


1) Pre-heat oven to 400 degrees
2) grease a 6 cup muffin tin with coconut oil
3) mix together all item but egg whites
4) in a separate bowl whisk egg whites until frothy
5) fold mixture into egg whites
6) distribute mixture evenly into muffin pan
7) bake 15 min

Chicken Curry Calfouti






6 eggs
1 TBSP Olive Oil
3/4 cup coconut milk
2 lbs shredded chicken
2 tablespoons curry spice, or to taste
Franks Hot Sauce


Directions:

Chicken:

1) Bring a large pot of water to a boil
2) Place raw or defrosted chicken in boiling water and cook until done.
3) Remove chicken form water and shred using either two forks or, once it has cooled a bit, your hands.

Other stuff ;)

1) Preheat oven to 400° F.
2) "Grease" a 10” round or 13×9” baking dish with olive oil to keep this from sticking.
3) Whisk together eggs, oil & coconut milk and curry powder until frothy.
4) Add chicken to eggs and spread to fill pan.
5) Bake for about 45 min or until the top is a nice golden brown.

I like to add frank's hot sauce to the top once it has finished cooking. I put that S*** on everything! OK, enough with the silly commercial quotes. This is another pretty simple yet very scrumptious paleo meal!

Spicy Paleo Meatballs


2.5 lb Ground Beef
3 eggs
3/4 cup almond meal
1.5 TBSP Granulated Garlic
2 TBSP Oregano
1.5 TBSP Cyan Pepper
2 cans Tomato Sauce

Olive Oil


Meat Balls:

1) Mix Beef and eggs together in a large bowl until meat is consistent all the way through.
2) Add almond meal and spices, mix by hand until there are no pockets of herbs or almonds
3) Roll small amounts of mixture into approximately 1-1.5 inch balls
3) In a pan or skillet on med high heat add enough olive oil that the meatballs don't stick and pan fry the meatballs until cooked all of the way through.

Sauce:

1) heat sauce over medium to medium high heat until hot.
2) If you want to make a spaghetti sauce add about 1 TBSP of Italian spices to sauce while cooking.


This is a very simple recipe and it tastes great!  This served 3 people for dinner with 1 serving for leftovers.  I am a big eater, so it may be even more for you!
